Oven Roasted Broccoli

As many of you close to me know and are sick of hearing about - I'm on a diet.  Or life style change or whatever you want to call it, but I'm in need of a smaller number on that damn scale.  The big reason besides health and all that good stuff is the upcoming wedding for my high school BFF.  We all want to look and feel our best in general... It's even more important when you're standing next to your very good looking friend in a gorgeous white wedding dress.

Now I'm sure you're thinking, what the fuck?   Well we went to an all girls school and we did not graduate in those hideous, androgynous cap and gowns.  We did it up!  So I've already had some practice, but this time I won't be rock'n the club volleyball body.  Hence the diet and this recipe.  It's one of my favorite things to eat right now that doesn't taste healthy.  This broccoli just tastes really good.

INGREDIENTS

  • 1 1/2 pounds broccoli, cut into florets
  • 3-4 Tbsp olive oil
  • Juice from half a lemon
  • Zest of one small lemon
  • Garlic salt
  • 2-3 garlic cloves, minced
  • Freshly ground black pepper
  • red chili pepper flakes

This recipes is not an exact science because I basically just eyeball everything.   Start by mixing your garlic and olive oil together; then pour it over your florets.  Mix quickly so that everything gets coated nicely.  I then sprinkle them with the salt and pepper, mix again and then a little more S&P.  Before the broccoli moves to your baking sheets I add a few quick shakes of the chili pepper flakes - more if you can stand the heat.  I line my cookie sheet with foil for easy cleanup.  Pop them into the oven at 425 for 15-20 minutes, depending on your oven.  Once they're done you'll zest the lemon over the broccoli and then squeeze a half over your healthy snack - yum!
