Birthday Cake Batter Popcorn

I guess you could say that I haven't quite gotten over my birthday.  Or maybe I'm just obsessed with sprinkles?  It's probably a little of both.  In an effort to continue the fun and treat myself in the new year I whipped up a batch of this deliciousness.  Let me just warn you though... this snack is like crack.  Once you start you won't be able to stop.  I know six cups of popcorn seems like a lot, but you won't want to share.  My advice is to make a double batch.

Ingredients

  • 1-½ cup White Chocolate

  • ¼ cups Vegetable Shortening

  • 1-½ cup White Or Yellow Cake Mix

  • 6 cups Popcorn (popped)

  • ¼ cups Sprinkles

Preparation

Melt the chocolate in the microwave. I microwave in 30-second intervals, stirring between each 30 seconds until it is fully melted. 

Add the vegetable shortening to the chocolate and stir until it is melted. I usually don’t have to put it back in the microwave to completely melt, but you can if you have to. 

Then add the cake mix to the chocolate.

Pour the coating onto the popcorn and coat evenly. I folded the "chocolate cake batter" over the popcorn careful not break apart the popcorn.

Pour the popcorn out onto cookie sheets to cool and harden. Sprinkle immediately with your choice of sprinkles.
